Most people attribute this to color theory and how blue evokes feelings of comfort and trust, but I think part of it is the desire to mimic older interfaces that relied on this color.

Personally, I don’t think the color of your links matters as much as how they are distinguished from non-interactive text. Elise’s article actually touches on this point towards the end: What matters more is that your links can be distinguished clearly. Sometimes that means using a recognizable color like blue, but imo, the use of underlines or some other decoration is far more important.
